- Observation (CORRECTED DURING INSPECTION): Internal temperature of foods in the main prep cooler:
- Paneer at 16 C, cooked rice at 17 C, cooked potatoes at 12 C.
- Staff stated all these foods were prepped and placed in cooler the night before.
- Note: Technician was on-site repairing cooler as there was ice-build. Ambient air temperature of cooler was 4 C or below.
- Corrective Action(s): Staff were instructed to discard these foods.
- Potentially hazardous foods must be 4 C or below.
- Ensure foods are adequately cooled.
- If a cooler is unable to maintain a temperature of 4 C or below, transfer all potentially hazardous foods to another working cooler.
