      • Observation (CORRECTED DURING INSPECTION): Observed handsink in staff washroom without liquid soap, soap dispenser not working at the time of inspection.
      • Health Rationale:
      • Handsinks not properly stocked with hot/cold running water, liquid soap and paper towels increases the risk of improper handwashing practices. This may lead to potential cross-contamination when handling food and potential foodborne illness.
      • Corrective Action:
      • discussed with operator at the time of inspection, stated that staff are informed to wash their hands at one of the two kitchen handsinks even if they use the washroom handsink.
      • Verified staff washing their hands after exiting the washroom. Ensure soap dispenser is fixed and washroom handsink is properly supplied with hot/cold running water, liquid soap and paper towels.

      • Observation: Observed batter and flour accumulating on the floor below the batter station.

      • Ensure soap dispenser is serviced such that it can adequately dispense during handwashing.

      • Observation (CORRECTED DURING INSPECTION): A food contact surface sanitizer pail with QUATs sanitizer was measured to be at 100ppm using test strips at the taco bell prep line. Staff informed that sanitizer pails are changed every 2 hours.
      • Corrective action: Staff member refilled the pail with QUATs from the dispenser which was measured to be at 200ppm. Ensure that all sanitizer pails are changed every 2 hours and to monitor/test the concentration to be at 200ppm or per manufacturer's direction, using test strips.
      • Health rationale: Adequate sanitization using approved sanitizer at the approved concentration facilitates the reduction of pathogen and/or toxin production.

      • Observation (CORRECTED DURING INSPECTION): Observation: Sanitizer bucket at front food prep area measured at 100ppm QUATS concentration.
      • Health rationale: Sanitizer for food contact surfaces at concentration less than 200ppm Quats are not strong enough to kill pathogens.
      • Corrective action: Immediately replace sanitizer solution in bucket to 200 ppm Quats solution. Ensure the sanitizer is changed frequently to maintain 200ppm Quats concentration. Measure sanitizer concentration as per manufacturer instructions. Test strips available (Expiring Feb 2022)

      • Observation: Observation: Wire shelving and hard to reach areas behind and (beside cooking units) observed to have accumulation of grease. Heavy grease build up in mop sink room.
      • Health rationale: Grease can potentially contaminate foods as well as attract potential pests.
      • Corrective action: Deep clean all hard to reach areas and wire shelving to remove grease guild up and ensure food premises maintained in sanitary manner. Ensure mop sink area is also maintained in sanitary condition.

      • Observation (CORRECTED DURING INSPECTION): Sanitizer buckets kept in the front of the premise at drive through counter and under preparation table was measured to be at 50ppm QUATS.
      • Correction: refill the sanitizer buckets to ensure 200ppm of QUATS is maintained at all times.

      • Observation: 2 Door Upright cooler (on Taco Bell side) --> left door does not close properly, there is about a 3/4 inch gap between the door and the door seal. Food inside was probed to be at 3 deg C.
      • Corrective Action(s): Fix cooler immediately so that it is not leaking cold air out.
