- Corrective Action(s): Discard aformentioned items. Do not store any chopped vegetable at room temperature. All cold potentially hazardous food must be stored at 4C or lower.

- Observation (CORRECTED DURING INSPECTION): Flats of raw eggs (total 38 - noted with internal temperature of 20.6C) were sitting at room temperature at the start of inspection. Picture evidence collected.
- No time tracking were provided for the raw eggs sitting at room temperature. The number of raw eggs that were out is more than required for rush hours.
- Corrective Action(s): 38 raw eggs were discarded into the garbage bin by the staff during the inspection. Do not keep cold potentially hazardous food out at room temperature unless you either have time tracking and only a small amount is brought out for lunch/ dinner services.

- Observation (CORRECTED DURING INSPECTION): 5 panini sandwiches with cooked chicken fillings were noted at room temperature - internal temperature was at 20.5C. A large container of cooked chopped chicken was stored at room temperature - internal temperature was at 18.1C. Picture evidence collected.
- As per staff, chicken was cooked this morning and was brought out for lunch service - however, no time tracking noted. Unable to confirm if chicken has been sitting at room temperature for more than 2 hours. Cooked chicken should be hot held at 60C or kept cold at 4.0C or below.
- Corrective Action(s): The 5 panini sandwiches and container of cooked chicken were discarded into the garbage bin by the staff during the inspection. Do not keep hot/ cold potentially hazardous food out at room temperature unless you either have time tracking and only a small amount is brought out for lunch/ dinner services.

- Observation (CORRECTED DURING INSPECTION): No sanitizer spray bottle/ container available during the inspection. As per operator, there was one available this morning - however the current staff onsite is unaware of where the spray bottle is or know of the use/ requirement of a food-grade sanitizer.
- Corrective Action(s): Instructed staff how to create a bleach sanitizer solution in a container for the time being (2 tsp bleach per 1 L water). 200 PPM chlorine residual was detected in the bleach sanitizer container.

- Observation (CORRECTED DURING INSPECTION): Front of house handwash station was filled with unwashed dishes. Drain mat was noted beside this handwash station.
- Corrective Action(s): Operator must ensure staff does not wash dishes in this handwash station as it is designated for handwashing only. Also, manual warewashing MUST be done properly with the wash, rinse, sanitize and air-dry step or go through the high temperature dish machine. Keep the handwash station emptied and accessible at all time so staff can perform proper handwashing when required.
