- Observation (CORRECTED DURING INSPECTION): Prep cooler noted with an internal ambient temperature of 9.9C. Food stored in this prep cooler was noted at between 7.8C - 10.1C (not a lot of cold potentially hazardous food was stored in this unit - only a container of shredded meat product, sliced tomatoe and some chopped produce was noted, however the turnover appeared to be high). As per operator, food is not left in this cooler overnight but brought out at the start of the morning. Operator believes that the temperature is not holding at 4.0C due to the food handler being in and out of this unit during service time.
- Corrective Action(s): Operator is to ensure any leftover cold potentially hazardous food in this unit is moved to another functioning cooler after the lunch rush. Monitor the cooler. If it reaches 4.0C or below, then the operator may resume using this unit. If not, service this cooler.
