      • Observation (CORRECTED DURING INSPECTION): Domestic cooler temperature measured at 8.6'C. Staff immediately voluntarily discarded 2 containers of whip topping, and 2 blocks of butter. Manager confirmed that this cooler will be discarded soon. Do not store any cold potentially hazardous food in this cooler if it cannot maintain the temperature at 4'C or below.

The dishwasher was serviced immediately, final rinsing temperature at plate measured at 71'C at the time of inspection. Always ensure to maintain the dishwasher temperature to ensure all dishes/equipement are properly sanitized.

      • Observation (CORRECTED DURING INSPECTION): 1. One Container of BUSH coloring noted to be stored at the dry storage shelving. Staff confirmed that no food in the premise was made by this coloring. Staff immediately voluntarily discarded the container of BUSH coloring. Do not use BUSH coloring as it contains ingredients that are unfit for human consumption. Only purchase the coloring from approved source.
      • 2. 2 trays of whipped cream (approx. 20 containers) best before date was on August 17. Staff immediately voluntarily discarded all whipped cream that are passed their best before date.

      • Observation (CORRECTED DURING INSPECTION): Sanitizer not prepared at the time of arrival of Environmental Health Officer. Operator to ensure an approved food safe sanitizer is available and prepared during operational hours. Sanitizer must be available to prevent the growth of pathogenic microorganisms on food contact surfaces. A mild chlorine solution can be made using 1/2 teaspoon of 5.25% unscented bleach to 1 liter of water. Solution can be made fresh daily, applied to a clean surface, and allowed to air dry.

      • Observation (CORRECTED DURING INSPECTION): High temperature dishwasher first run noted at 65C, second run 58.4C. Manager informed dishwasher technician at the time of inspection to fix unit on site. Dishwasher capable of dispensing 50ppm chlorine at the plate and noted 76.9C at the plate after final rinse cycle. A follow-up inspection for unit to be conducted.

      • Observation: 1. Back door was open during inspection. A small bird was found in bakery area that entered bakery with doors open.
      • 2. Pest control is in place. No pest activity noted during inspection, however, pest control invoices were not available.
      • Corrective Action(s): 1. Ensure to keep all doors closed at all times unless necessary (ie. during delivery).
      • 2. Provide copies of last 3 pest control invoice to Environmental Health Officer.
      • This must be completed immediately.

      • Observation: Cleaning was not adequate throughout facility during this inspection. Cleaning schedule that was previously set up is not being followed.
      • Corrective Action(s): All work/preparation areas, coolers, dishwashing area and behind the cooking area and dough machines need detailed thorough cleaning on routine basis. A schedule must be set up and followed to ensure all deep cleaning is being done on regular basis. This was discussed with operator during this inspection.

      • Observation: Lighting throughout the facility is very dim in the bakery area. It is very hard to see hard to reach areas as some areas are very dark. Lighting must be bright so all spills, hard to reach areas and prep areas can be cleaned regularly and maintained in clean sanitary condition at all times.
      • Corrective Action(s): Install new lighting so the faclility is bright. This must be completed by December 1, 2018.

      • 4. Walls in bakery area
      • Corrective Action(s): All cleaning should be completed as soon as possible.

      • Observation: The following observations were noted:
      • 1. Dented cans (crushed tomato cans) found in facility. Operator informed that these cans are being used for non-food related procedures (ie. making table height adjustments).
      • 2. Cardboard was found in the walkin cooler to line pallets. This can lead to contamination and lead to the growth of pathogens.
      • Corrective Action(s): 1. Do not use any food items for non-food related procedures. Remove all dented cans immediately.
      • Install or use another method for making height adjustments to tables.
      • 2. Remove all cardboard in the walkin cooler and thoroughout the facility.

      • Corrective Action(s): Install/purchases food grade containers with covers on all food containers. Missing lids need to be replaced on all larger food containers. Store all foods in food grade containers with lids.

      • Observation: Pest control measures in place. Pest control contractor has supplied multiple fly and mouse traps for facility. Light fly traps were found to located on countertops or not operating properly.
      • Back door area (located in food processing area) needs to be sealed properly to prevent pests from entering facility.
      • Corrective Action(s): Ensure all doors, holes and areas are sealed to prevent pest infestation.
      • Fly traps need to be reinstalled in appropriate places on walls in order for proper pest control measures.
