- A ready-to-use surface (chlorine) sanitizer initially prepared was tested at 10 ppm. Operator prepared chlorine sanitizer during inspection and concentration was tested at 100 ppm.- As discussed, ensure that sanitizer concentration is periodically checked using the available test strips.

- Label for sanitizer spray bottle was not present. Operator relabeled bottle during the inspection.- All chemical bottles/containers are to be properly labeled as to its contents.

- Duck rillettes and one meat packet was observed stored at room temperature. Temperature was measured at 2.0 degrees Celsius. Operator moved meat packet to the cooler.- Thaw food using safe methods: In a cooler at 4°C or below, under cold running water.

- *Ongoing Violation*Mouse droppings observed on both ends of the market stall (near the dishwashing area and besides the front cooler).- Clean and disinfect the affected area.- Pest devices are in place in multiple areas throughout the market stall.

- No surface sanitizer solution available at time of inspection. Operator stated they use diluted bleach solution, but bleach bottle was also not available in the stall to be used.- Ensure market stall has surface sanitizer solution readily available and prepared for operational use.- Operator located a bottle of bleach and prepared a spray bottle of diluted bleach solution and was tested at 100ppm.

- No chlorine test strips available to monitor sanitizer concentration.- Acquire test strips.
