- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- A staff member stated that the spray bottle in the kitchen was used for cleaning the counters, but it contained only water and was measured at 0 ppm chlorine. No other sanitizer bottle or solution was present. Upon request, another staff member added bleach to the bottle and it was measured at a final concentration of 100 ppm chlorine. Please ensure counters in the kitchen are sanitized with a solution of at least 100 ppm chlorine.
