      • 1) 10:26am - Food (spaghetti and white meat sauce) were prepared at approx. 10 am and left out on the counter until serving at lunch at 11:15am. Food was approx. 40C. Hot foods must be held above 60C until just before serving.2) A hot holding thermometer was not available for use.
