- A container with bleach sanitizer solution was not labeled. Please ensure all chemicals are labeled to prevent misuse. Corrected onsite. The container was then labeled.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Processed garlic was held at around 11C in the prep cooler; the bottom compartment was below 4C. Maintain all cooler compartments at 4C or below. The operator placed the garlic in the bottom compartment of the cooler.The operator indicated difficulty in maintaining temperatures. Operator was instructed to limit toppings, use ice as needed, and keep cooler covers closed when not in use. Discard food held above 4C for over 2 hours.

- Light fixture in dishwashing area has no cover.Please re-install a cover or purchase light tube sleeves/covers.
- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- Some stored utensils had visible food debris. Ensure all utensils are thoroughly cleaned and sanitized. The utensils were then taken for cleaning.

- - Countertops, high-touch surfaces, and floor corners in the kitchen and back area were observed to be unclean. Photos were later provided through email showing these areas had been cleaned.Please follow:-Wipe up spills immediately.-Clean surfaces using detergent and water.-Rinse with clean water.-Sanitize using an approved sanitizer. Maintain bleach sanitizer concentration at 100 ppm.
