- Observation: 1) Pest control company noted that pests were found during the last inspection. 2) There are droppings in the entire facility near the walls and between the pallets. 3) Not enough traps set, and also the frequency of the pest control visits is not adequate because all the bait is being eaten.
- Corrective Action(s): 1) Increase the frequency of pest control visits from once per month to once per week. Once the problem gets better you can lower it to twice per month. 2) Clean all the droppings and sanitizer with 100-200 ppm bleach solution. 3) Set the traps and have the pest control company replace the bait/traps more frequently.

- Observation:
- 1) Racks of cooked product are wheeled through the middle of the room where raw surimi are handled to get to the other side for cooling.
- 2) Blocks of cooked crabmeat are now shredded with a grinder with a metal blades. No control in place to prevent potential metal hazards.
- 3) Worker's sleeves came into contact with the cooked product on occasion.
- Corrective Action(s):
- 1) Cool the cooked product in the space next to the ovens.
- 2) Develop monitoring procedures to ensure that the metal blades are intact (grinder and silent cutter). Add to your Food Safety Plan. A metal detector is recommended.
- 3) Ensure that the cooked product is protected from contamination that may be on worker's garment.

- Observation: The boot wash mats were dry and had no sanitizer in them.
- Corrective Action(s): Ensure that sanitizer is availble in the mats and are changed regularily. Do not store broom and brushes on the mat. Store on a rack mounted on the wall.
