      • Observation:
      • Found a few dead cockroaches on the glueboards around the pizza oven and behind the convection oven in the cook-line area. Cockroaches spread disease on via their feet when they walk on a dirty surface and then on food and/or food contact surfaces. Unable to determine how long the glueboards have been in place.
      • Corrective Action(s):
      • - Call a professional pest company to inspect and determine if cockroach treatment is needed.
      • - Follow all recommendations made by the professional pest company.
      • - Write the date on the glueboards, when they were placed down.

      • Observation:
      • Food and debris found on the floor along the base of walls, under and behind equipment, prep tables, and storage racks. This will provide a source of food for pests and encourage them to multiply.
      • Corrective Action(s):
      • - A thorough cleaning of the floor and walls found beneath and behind equipment, prep tables, and storage racks.
      • - Pull these items away from the wall to clean the floor and walls beneath and behind them.
      • - A thorough cleaning should be done at least once a month.

      • Observation:
      • The 2 waste/drain pipes in the bar are leaking, and a pan/bucket is currently catching the dripping water. Collection/pooling water is a water source for pests (flies, cockroaches, rodents). Pests will drink and multiply with a souce of wate. Owner explained that these pipes have been repaired, but they keep getting damaged by staff.

      • Repair/replace the broken waste/drain pipes so they no longer leak.

      • Observation (CORRECTED DURING INSPECTION): Sanitizer bucket in back of kitchen did not have any sanitizing solution present; staff stated they are using degreaser to clean food contact surfaces.
      • * Fill a bucket of sanitizing solution that is adequate to sanitize food contact surfaces. Staff prepared a bucket of bleach solution and concentration tested at 100ppm chlorine
      • Rationale: A sanitizing solution such as bleach is necessary to kill germs, degreaser can only be used to remove oils and grease.

      • Observation:
      • There is accumulated food on the floor under equipment in the bar area, pizza making area, and the cook line area. The food will attract and harbour pests.
      • Corrective Action(s):
      • Increase the frequency these areas are cleaned to remove the food. Staff should be moving the equipment away from the walls, so the floor underneath can be cleaned. OR, staff need to sweep and mop under equipment, ensuring the broom and mop reach all the way to the back wall.

      • Observation:
      • Plastic bags, cardboard, and foil are lining shelves and surfaces. These materials are not cleanable or durable, and will attract pests.
      • Corrective Action(s):
      • Plastic bags, cardboard and aluminum foil must be discarded at the end of each day as these materials are not durable, sealed or cleanable. Recommend not using these materials to cover or line shelves, just clean these surfaces each day.

      • Observation:
      • 1) The drain pipes under the sinks, in the front bar area are leaking. There is pooling water and debris accumulating on pipes and in buckets catching the dripping water. The pooling water and debris will breed drain flies and fruit flies.
      • 2) There is unsealed wood and exposed dry wall around the door frame leading into the pizza dough making area. Unsealed wood and dry wall is not durable or cleanable, this will attract pests.
      • Corrective Action(s):
      • 1) Contact a certified plumber to repair or replace the drain pipes so they no longer leak. Clean up the pooling water and debris on the pipes, and remove the buckets.

      • 2) Paint any unsealed wood, and install painted wood over the exposed drywall so it is durable, level, sealed, and cleanable.

      • Observation (CORRECTED DURING INSPECTION): A spray bottle in the kitchen area was tested and found 0ppm chlorine. Sanitizer level for chlorine should be maintained at 100ppm for adequate disinfection of food contact surfaces. Inadequate disinfection can lead to cross contamination of pathogens

      • Observation (CORRECTED DURING INSPECTION): A bucket of bleach based sanitizer was tested and found to be >200ppm Cl in the back kitchen area. Test strip bleached out. After 200ppm chlorine based sanitizer must be rinsed off to prevent chemical contamination of food.

      • Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer supply for the dishwasher was empty at time of inspection. Additionally, the tubing was blocked near the inlet, preventing the pump from dispensing sanitizer into the machine.
      • Corrective Action(s): *Operator cut off blocked portion of the tubing, removing the blockage.
      • *Sanitizer supply was replaced at time of inspection
      • *Test sanitizer concentrations in the dishwasher, glasswasher, and sanitizer solutions daily to ensure adequate concentrations are present.

      • Observation: One of the 2 walk-in coolers is currently operating above required temperatures for food safety (<4 Celsius). Current temp measures ~9 degrees Celsius.
      • Corrective Action(s): Operator indicates they are aware of the issue and are expecting a repair technician to arrive today to diagnose an repair the unit.
      • *Monitor temperature in the cooler closely. If repairs cannot be completed before end of day, transfer all potentially hazardous foods to alternate coolers and discontinue use until repairs completed.
