      • Observation (CORRECTED DURING INSPECTION): Staff described how dishes were washed and sanitized - sanitizing step is skipped. Dishes are washed with soapy water, rinsed and then air dried.
      • Corrective Action(s): When manually dishwashing, wash with hot soapy water, rinse with clean water, sanitize (using 100-200 bleach or 200-400 ppm quats) for 2 minutes and then air dry on a sloped surface (water should drain into the sink).

      • Observation (CORRECTED DURING INSPECTION): Handwashing sink was being for dishwashing during food prep hours.
      • Corrective Action(s): Handwashiing sink must be accessible at all times during food prep and service hours. Use two compartment sink for handwashing at the end of food prep and service.

      • Observation: Rodent droppings observed behind sliding door cooler on top of heat vent.
      • Corrective Action(s): Clean up droppings and sanitize this area. Inspect facility for droppings daily.
      • Ensure pest control services are in place and traps are set up as part of integrated pest management.
      • Sanitize all surfacers prior to using.

      • Observation: Grease observed on sides of the wall beside the stove and oven. Dirt and debris behind stove and oven, and along the walls in the storage room and along the wall behind cooler and freezer in kitchen. Wall along the chest freezer in kitchen dirty from old spills. Walls along counters are sticky.
      • Corrective Action(s): All surfaces must be visibly clean and free of dirt and debris. Correct by September 29, 2022.
      • Note: All surfaces (walls, floors and counters) must be smooth, easy to clean and non absorbent.

      • Observation: Ice cream freezer that no longer works stored in the storage room
      • Corrective Action(s): Remove equipment that is no longer used. Correct by September 29, 2022.

      • Observation: Rodent droppings observed underneath the shelves in the dry storage area, behind the 2 small freezers, and the large freezer.
      • Corrective Action(s): Thoroughly clean and sanitize the above noted areas. No rodents caught in traps setup throughout the kitchen. Continue to monitor rodent activity and take necessary corrective action. For kitchen staff, clean spills immediately and clean premise on a frequent basis especially all hard to reach areas and behind large equipment. Sanitize all food contact surfaces prior to beginning daily operations. Correct immediately.

      • Observation (CORRECTED DURING INSPECTION): Premise no longer using wiping cloths that release quats to 200ppm when diluted with 4 litres of water. New bulk Ostro-san solution used to make quats sanitizer solution. At time of inspection quats concentration over 400ppm.
      • Corrective Action(s): Ensure manufacturer's instructions are followed on dilution. Dilute 2ml to 1 litre of water to make the 200ppm quats sanitizer solution. Obtain test strips to verify concentration.

      • Observation (CORRECTED DURING INSPECTION): Rodent droppings observed on the lower shelf of the hot holding table.
      • Corrective Action(s): Staff removed all containers/trays/lids and manually warewashed with a 100ppm bleach sanitizing step. Lower shelf of hot holding table was cleaned then sanitized with 200ppm quats sanitizer.

      • Observation: At the time of inspection rodent droppings observed behind the large chest freezer and on lower shelf of the hot holding table.
      • Corrective Action(s): School district has placed numerous snap traps and is actively dealing with the rodent issue. No rodents caught however continue to monitor rodent issue and take necessary corrective action such as sealing all potential entry points, removing any sources of pooling/standing water, removing any potential pest harbourage areas, promptly cleaning any food spills, and cleaning all hard to reach areas on a regular basis.

      • Observation: Permit to operate issued by Fraser Health with valid decal not posted in a conspicuous location.
      • Corrective Action(s): Validation decal must be placed onto the permit to operate. Followup required with Canuel Caterers. Correct by April 4, 2018.

      • Observation: Mouse droppings observed behind the freezer next to Aquafina sliding glass door cooler. Some droppings also observed on the lower shelves for the shelving units inside the dry storage room.
      • Corrective Action(s): Since the last inspection snap traps have been placed in the kitchen to monitor for mice activity and bait boxes in the dry storage room. No mice observed caught in traps at time of inspection. Staff aware of issue and has placed all bread, wraps, etc. in plastic totes with secure lids.
