      • Observation (CORRECTED DURING INSPECTION): Staff was seen cleaning the meat cutter band saw by only wiping off the meat dust using a cloth in between cutting different meats.
      • Corrective Action(s): Staff was instructed to clean the meat cutter with soap water, rinse with clean water, and then spray the machine with sanitizer in between every use.

Bleach was remade at 100ppm and QUATs solution was remade in the 3 compartment sink and tested at 200ppm.

      • Corrective Action(s): 1. Do not store food in non food-grade containers. Product discarded.
      • 2. Label all bottles. Do not store chemicals near food.
      • 3. Only use 1/2 tsp unscented bleach per litre of water for a 100-200 ppm bleach solution.
      • 4. Bulk foods (with the exception of whole produce or wrapped foods) must be dispensed in a way that protects it from contamination. Place product in food grade bins with lids with a designated spot for bags and scoops.
      • Until proper equipment is obtained, do not sell bulk product. Prepackaged product is allowed.

      • Corrective Action(s): 1. Quats from secondary dispenser (used for 3 compartment sink) was dispensing at 200 ppm - bottles were refilled with this solution. Adjust the primary dispenser so that it is dispensing at 200 ppm and use as per manufacturer's recommendations.

      • Observation (CORRECTED DURING INSPECTION): 1. The dedicated handwashing sink in meat shop (located behind service counter) did not have single use paper towel nearby and paper towel was not in a dispenser.
      • Corrective Action(s): 1. During the inspection, operator received a delivery of the paper towel dispenser that was to be mounted on the wall near the sink. Install immediately.
