      • Observation: Quats sanitizer test strip shows sanitizer concentration is at about 150ppm. Noted an air bubble in line.
      • Corrective Action(s): Use according to label - 200ppm required. Also recommend sealing the space between the backsplash and wall at this sink to protect from water damage of wall area.

      • Observation: Small number of mouse droppings noted on floor of dry storage room and near ice cream freezer. Note that food is protected in pest proof bins and kitchen is very clean. Pest monitoring is in place and effort has been made to seal entrances where pests may enter (door sweeps, sealing holes etc.)
      • Corrective Action(s): Continue with your pest control program. Consider sealing base of ice cream freezer and steel wool at floor drain in dry storage room (if ok to do this).

      • Observation: Flooding can be observed under the dishwasher. Staff reported that the pump from the dishwasher drips water.
      • Corrective Action(s): Staff has reported to school maintenance department and it will be fixed in a few days. Anti-slip rubber mats available in the dishwashing area. Date to be corrected by: 1 week.

      • Corrective Action(s): 1. Do not towel dry dishes, always air dry. Install drying racks if necessary.
      • 2. Ensure sanitizer solution is tested frequently/changed.

      • Observation: Soapy water and sanitizer solution stored in similar buckets - hard to differentiate which is soapy water and which is sanitizer. Old food containers (i.e. feta cheese) used for chemicals.
      • Corrective Action(s): Label buckets or obtain different colour buckets for different chemicals. Do not use food containers to store chemicals.

      • Corrective Action(s): Ensure after food contact surfaces and equipment are cleaned with warm soapy water a food contact surface sanitizer is used. 100ppm bleach prepared as an interim until the quats dispensing system is serviced. This is a recurring issue. Verify the concentration of quats is at 200 to 400ppm on a daily basis by using the available test strips.

      • Corrective Action(s): Service the quats dispenser. Correct by September 17, 2019. Until it is serviced and dispensing quats at 200ppm dilute 1 oz of regular unscented bleach to 1 gallon of water. Distribute into labeled spray bottles for sanitizing food contact surfaces.

      • - Ice machine door damaged and not in use. As a temporary measure a taped garbage bag being used as a cover. Note: garbage bag does not come into contact with ice. Scoops stored outside in a sanitary manner.
      • Corrective Action(s):
      • - Adjust under the preparation table cooler. Service if required. Ensure unit is capable of maintaining 4 degree C or less at all times. Correct immediately.
      • - Part required for the damaged ice machine door. Correct by December 31, 2017.
