- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- Utensils and equipment are not being properly washed and sanitized. Staff onsite indicated that equipment and utensils are being washed in the front hand sink and sanitized using a spray bottle containing quaternary ammonium (quats) sanitizer, followed by wiping the items after application.Please note the following requirements:- The three-compartment sink located in the back must be used for washing, rinsing, and sanitizing all equipment and utensils.- Each compartment must be equipped with drain plugs to allow proper immersion.- During the sanitizing step, all items must be fully immersed in the sanitizer solution for the time specified in the manufacturer’s instructions for use.- Do not wipe off the sanitizer. Instead, allow all items to air dry.
