      • ** - build up of grime and grease was observed on the slicer, the dough roller/sheeter, the walk-in cooler walls/ceilings/fans/shelving, all bakery food equipment (ie. mixer) especially around high-touch areas such as door edges, knobs, control boxes, etc.

      • ** - thorough cleaning required and retraining to occur to ensure cleaning is completed DAILY. Build up was observed on floors, walls behind equipment, and shelving.

      • ** - high risk foods were improperly thawing at room temperature on the counter. ** - multiple high risk foods in large quantities were observed stored at room temperature - only one staff member was observed to be in the department at the time. Ensure staff only take out what they will be preparing immediately and leave other high risk foods in the cooler/freezer until such time they are ready to process it.

      • Small cooler in the sandwich preparation area was >4C. Cooked eggs found to have an internal temperature of 8C. Staff adjusted thermostat at the time of inspection. A thermometer was available in department to monitor temperature. ACTION: continue to monitor cooler temperature diligently. If temperature is not consistently at or below 4C, remove all food product until the cooler is repaired.
