- The dishwasher is noted to be between 59.4 to 68.6 degrees Celsius (Verified 4 times). Repair the dishwasher and ensure the dishwasher maintains a minimum temperature of 71 degrees Celsius. Alternatively, remove the dishwasher. In the meantime, use the three- compartment sink for dishwashing. Operator indicated:- The dishwasher is not used. -Three compartment sink is used for dishwashing. -Sometime is required for repairs. If the facility becomes very busy, please switch to single-use disposable plates and utensils to prevent the buildup of dishes.

- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Insanitary brushes and used steel wool and sponges are noted in the sink area. Please ensure all sponges and steel wool are discarded after use, as steel wool and sponges are not cleanable. Please ensure any brushes used in the facility are able to be cleaned and sanitized. If brushes cannot be cleaned, please treat them as single-use disposable. The following items were discarded at the time of the inspection by the operator:-Used sponges.-Steel wool.-1 small scrub brush. The other brush was placed in dishwashing. Please monitor the condition of the brushes and replace as required.
