      • Hearing protection is hanging off of a meat hook. Ensure personal protective equipment such as hearing protection is stored in a manner that prevents contamination of equipment. During the inspection: staff removed the personal protective equipment and meat hook.

      • Unsanitary aprons are hanging on the meat hooks. Ensure used aprons are laundered after use and stored in a manner that prevents potential contamination. The operator removed the aprons during the inspection.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The handwashing sink in the back processing area, by the receiving doors, has items stored in it. Remove the items from the handwashing sink and ensure all handwashing sinks are unobstructed for proper hand hygiene. The operator removed the items from the handwashing sink at the time of the inspection.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • A hole is noted in the concrete floor by the walk-in freezer posing a potential tripping hazard and making the floor difficult to clean. Please repair the floor to be smooth, durable, impervious to moisture, and easily cleanable.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The wall beside the walk-in freezer door is damaged up to the ceiling. Repair the wall and ensure all walls are smooth, durable, easily cleanable, and in good repair.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The following areas require some minor cleaning: -Door to the carcass fridge (inside and out).-Shelves in the back cooler with jared products. -Floor in the walk-in freezer. Clean the indicated areas and ensure all areas are maintained in a clean and sanitary condition.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Used cleaning cloths are stored on the sink.Please ensure cleaning cloths are stored in food safe sanitizer and ensure the sanitizer solution is replaced every 4 hours or more frequently as required. Staff replaced the cleaning cloths and stored the new cloths in sanitizer solution during the inspection.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Clean aprons are stored in the staff washroom. Please remove the aprons and ensure the aprons are stored in a manner that protects them from contamination. The operator moved the aprons during the inspection.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
