- Observation (CORRECTED DURING INSPECTION): One sanitizer spray bottle was broken. The Sanitizer bottles in the FOH and BOH as well as the solution used to store wiping cloths did not have any chlorine in it.
- Corrective Action(s): Discard the broken bottle. Clean and refill sanitizer spray bottles. Change the solution regularly.

- Corrective Action(s): This is not acceptable. You must check the temperatures of each cooler daily and then write down the temperature in the logsheet. Include temperatures for miso soup and rice.

- Observation: Mice droppings noted in back storage room where takeout containers are stored in boxes, around the large chest freezer, on shelving beside the freezer. Droppings noted beside the undercounter cooler (where rice cookers are stored).
- Corrective Action(s): Droppings should be cleaned up with a bleach solution when you see them! Have a professional pest control company come in for servicing. Look for and seal any holes/gaps as discussed. Email me a service report before Dec. 31, 2024. And another one in January.
