- Quat sanitizer solutions were measured at 50 ppm, need to be at minimum 200 ppm.- 200 ppm sanitizer solutions were prepared.

- The dishwasher rinse temperature measured at 68C at the plate (after 3 dishwash cycles), needs to be at minimum 71C at the plate. The external wash and rinse gauges are reading 140F and 177F.- The operator called for service adn will manually sanitize all dishware until the enteral rinse gauge is reading at minimum 180F.
