- Observation (CORRECTED DURING INSPECTION): Battery-powered soap dispensers for the hand-washing stations outside and inside were not operation at onset of inspection. (Staff were in the process of cleaning the processing room - no food processing was being performed while on-site)
- Corrective Action(s): Operator began replacing the batteries for the soap dispensers while on-site.

- Observation (CORRECTED DURING INSPECTION): An uncovered cardboard box with bags of raw chiken was found on top of a package of sugar.
- * Move the box of raw chicken and place it beneath the sugar to prevent juices from dripping which may cause cross contamination

- Observation: Fan in the refrigerated room was observed leaking water drops onto the food preparation table and chopping boards
- * Repair the fan to prevent water drop leaks which may contain bacteria, move the preparation table away from the dripping fan in the meantime

- 101 - Plans/construction/alterations not in accordance with the Regulation [s. 3; s. 4]
- Observation: Floor in processing area is peeling up in several areas exposing the concrete underneath. Exposed concrete is porous and can hold on to grease and food debris which can allow bacteria to grow.
- Corrective Action(s): Repair areas where epoxy floor is missing and concrete is exposed. Due: June 12, 2023.

- Observation: 1) Clean knives and utensils observed being stored on rack on top of mop sink. Knives and utensils could become contaminated from the mop sink when stored here.
- 2) Several empty boxes that previously had raw chicken in them were stored on top of the cutting board where radishes are prepared. This could contaminate the cutting board where ready to eat food (ie radishes) are prepared.
- Corrective Action(s): 1) Install a drying rack/shelf above or next to the three compartment sink to allow clean dishes to be stored and dry. Due: May 17, 2023 (1 week)
- 2) Ensure that boxes of chicken are not put on any of the areas where the radishes are prepared to prevent cross contamination. Cutting board recleaned during inspection.

- Observation: Two large gaps observed on either side of the receiving bay door that could allow pests to enter.
- Corrective Action(s): Repair/seal up gaps in door to prevent pest entry. Regular inspections done by professional pest control company and they may have suggestions for how to seal up these areas.

- Observation (CORRECTED DURING INSPECTION): Handsink in the sanitizer room is blocked by equipment and lacked paper towel. Ensure all handwash stations are clear and adequately supplied with hot/cold water,paper towel and soap at all times
- Corrective Action(s): Operator removed the items blocking the hand wash station and restocked the paper towel

- Observation: Bleach sanitizer mislabelled in a "sink and surface" spray bottle. Operator indicated that this was Quats solution.
- Corrective Action(s): Ensure all sanitizer are labelled correctly to the correct chemical. Operator to obtain new bottles for bleach.
