      • Observation: 1) Minor amount of rodent droppings observed in the space below the ovens.
      • 2) Spilled coffee grounds in the undercounter cabinet closest to the fridge.
      • Corrective Action(s): Remove rodent droppings. Clean and sanitize this area with a strong bleach solution. Clean up spilled debris and dry goods to prevent attracting pests.

      • Observation (CORRECTED DURING INSPECTION): Kitchen refrigerator #1 had an ambient temperature of 9 C and # 2 had an ambient temperature of 11 C. Both refrigerators were new, but were adjusted to the warmest setting.
      • Corrective Action(s): Both refrigerators were adjusted to the coldest setting and were < 4 C afterwards. Ensure that they are checked daily.

      • Observation: The perimeter of the dry storage room did not bear a smooth, non-aborbent and easily cleanable floor surface. Dirt and some rodent droppings were observed around the perimeter.
      • Corrective Action(s): Remove rodent droppings and dirt around the perimeter of room noted. Repair the floor to provide a surface that is smooth, non-absorbent and easily cleanable around the perimeter (eg. repair floor and install baseboards etc.).
      • Correction date: by March 14, 2019.

      • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation: The surfaces of the the shelving units in the dry storage room downstairs were made of raw wood. Some shelving units had paint that were worn off.
      • Corrective Action(s): Repair and repaint the shelving units to bear a surface that is smooth, non-absorbent and easily cleanable.

      • Observation (CORRECTED DURING INSPECTION): Baking pans, dough roller, cutting board etc. were found in areas (under the countertops near the sink and below the oven) with pest activity. Some food contact equipment/utensils stored above the stove area (fume hood cabinet) that appeared hard to clean.
      • Corrective Action(s): Wash and sanitize all food contact items. Remove all of the food contact items to a storage area away from pest activity. Equipment above the stove/fume hood area must be moved to an area that is easier to clean.
      • Correction date: Immediately.

      • Observation: Whole fruits (apples, oranges) stored on shelves downstairs where rodent droppings were noted.
      • Corrective Action(s): Move fruits to pest proof storage area.

      • Observation: Rodent droppings noted in the following areas:
      • -under the counter near the kitchen sink
      • -under the built-in oven
      • -on the shelf in the dry foods storage area downstairs
      • Corrective Action(s): Spray the noted areas with water, use paper towels to wipe away all rodent droppings, clean and disinfect areas with 100ppm bleach sanitizer and allow to air dry.
      • Increase pest control services from monthly to weekly. Provide invoices as proof. Follow the recommendations from pest control company. Continue to monitor for pest activity by visually inspecting for rodent droppings and removing them and cleaning and sanitizing the areas..

      • Corrective Action(s): staff re-made sanitizer at 100 ppm chlorine in spray bottle, however the spray bottle is for a Lysol cleaner with a foaming spray nozzle.
      • Provide a new spray bottle with a proper spray nozzle for sanitizing food contact surfaces.

      • Observation: duct tape being used to "repair" broken scissors
