    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: At the time of the inspection the low temperature dishwasher was observed as not having a working sanitizing cycle. It measured lower than the 50-100ppm chlorine. Staff stated that a service company will be called to assess and fix the issue.
      • Temporary solution until the unit can be fixed or replaced will be to complete the wash and rinse cycle using the dishwasher as these cycles were observed as working and than use the 3 compartment sinks for the sanitizing step., The sanitizer used is quats for the sinks and measured at 200ppm. Manager agreed and was already implementing this.
      • Corrective Action(s): Ensure that the unit is in working order and that the sanitizing cycle has the required concentration of sanitizer (Chlorine) for this action. Must provide adequate sanitizing action.
