- Observation: Noticed several fish ( rockfish, cod and steelhead trout) in the front display cooler stored double stacked on plastic trays on ice; internal temperature of fish stored on the top layer ranged from 7-9 degrees C ( too high).
- Corrective Action(s): 1. Ensure that all fish and seafood items are stored in single layers on metal pans or trays as it provides better contact with ice underneath.( immediately)
- 2. Recommended using mechanical refrigeration in addition to ice in the front display cooler to maintain proper refrigeration. Ensure that all fish/seafood items are displayed at 4 degrees C or colder at all times. ( immediately)

- Observation: Internal temperature of salmon fillets and other fish stored on ice in the front display cooler registered between 6.8-8.3 degrees C. Too high.
- Corrective Action(s): Trays of fish were moved to the walk-in cooler. All fish and seafood items must be held at 4 degrees C or colder at all times. Consider making the following changes:(Immediately)
- 1. All fish and seafood items must be displayed in single layers on stainless steel trays i.e. not stacked on top of others.
- 2.Turn on the refrigeration units to provide supplementary refrigeration to the products stored on ice.
- 3.Provide barriers to prevent direct sunlight on the displayed items.
