- Reveiwed Probe thermomter calibration, calibration process error ice used without water. Probe thermometer to be placed in container full of ice and filled to the top with water, after immersing thermomter for 5 minutes and mixing, the solution should be at 32 F or 0 Celsius. After calibration, the premise thermometer was within one degree Celsius of FHA thermometer

- Corrective Action(s): Make sure to keep to the two hour rotation/discard protocol. Periodically audit the food temps with probe thermometer. Keep food (possibly adjust unit temperature) above 60 C if in excess of this time range.
