      • Corrective Action(s): Adjust this unit to keep food less than 4 C. Recommend the plastic cold air curtain be fixed such that there are no missing pieces to keep cold air in better.

      • Observation (CORRECTED DURING INSPECTION): - Reviewed sanitizing procedures related to vegetable and fruit cutting and prepping. Bleach on-hand, but not in solution for sanitizing various work surfaces.
      • - Also, large vinyl cutting boards worn and discoloured in several spots. Residual dirt, food and possibly mould growth observed.
      • Corrective Action(s): Make sure there is sanitizer available at all times to disinfect work surfaces. This can be in a 'sani-bucket' regularly changed (2 hour rotation), or by using a spray bottle with bleach solution inside. Proper concentration should be 100 to 200 ppm solution (28 ml bleach to 4 litres water// 1/2 teaspoon bleach to 1 litre water). Verify this practice in place for next scheduled inspection.
      • **recommend bleaching 'white' the large cutting boards to make them easier to maintain clean and to get rid of left over residue. This can be up to 1 part bleach to 10 parts water, but ensure cutting boards are rinsed after process.
