      • Observation (CORRECTED DURING INSPECTION): Cooler drawers had chicken wings/deep fried cauliflowers measured at 8-9'C. The unit had an ambient air temperature measured at 7.2'C. Temperature knob was adjusted by the chef at the ambient air temperature decreased to 4'C.
      • Corrective Action(s): Ensure to monitor cooler temperatures on a regular basis as per the facility's food safety plan.

      • Observation (CORRECTED DURING INSPECTION): 1 bottle of bleach solution at the bar measured >200ppm chlorine. There are QUATS and bleach both being used for the bar area.
      • Corrective Action(s): Use only ONE chemical or the other - do not use both chemicals for sanitizing food contact surfaces. Mixing chemicals may create harmful gasses that are toxic to inhale.
      • Staff discarded the bleach solution at time of inspection.

      • Observation: Light cover that is directly above the food prep station in the corner of the kitchen is cracked.
      • Corrective Action(s): Repair or replace the light cover so that there is no potential for contaminating food being prepped.

      • Observation: Cleaning is required in the following places:
      • > Rodent droppings at the end of the dishwashing line around the white chest freezers

      • > Food debris in the bottom of the glass cooler (opens from the top) under the crates/rack
      • Corrective Action(s): Clean and sanitize the premises as per your sanitation plan. Remove food debris and broken glasses. Remove droppings and continue to monitor for activity.

      • Corrective Action(s): Do not continue this practice. All surfaces that are used for food or glassware/utensils must be smooth, non-porous and easy to clean. Allow the washed glassware to dry on the rubber mat only. If something to collect excess water is absolutely necessary, use a food-grade tray or a lipped mat to collect water.

      • Observation: - Mouse droppings noted on shelf in server area where boxes of ice cream cones were stored
      • - One package of ice cream cones was damaged with rodent chew marks
      • Note: Issue appeared to be limited to this area
      • Corrective Action(s): - Damaged/chewed package of ice cream cones was discarded. Check remaining boxes and discard if any signs of damage is noted. [Corrected at time of inspection]
      • - Clean up rodent droppings and disinfect affected area. Continue to monitor for any further rodent activity to establish if rodent activity is current or if from past issues. If any additional rodent droppings are noted, ensure area is cleaned and disinfected promptly and notify pest control technician of rodent activity in this area for additional traps to be placed.

      • 4) Grime noted on exterior of dry goods bins
      • Corrective Action(s): 1) Discard cardboard. Wash shelves to remove mold. Either paint/seal wooden shelves so that surface is smooth, non-absorbent and cleanable or replace shelving unit with one of suitable material for food premises.
      • 2) Thoroughly clean floor under equipment in bar to remove residue and bottle caps. Ensure this is completed routinely as part of the regular cleaning schedule.
      • 3) Clean ceiling of walk-in cooler to remove mold
      • 4) Clean exterior of dry goods bins.

      • Observation (CORRECTED DURING INSPECTION): REPEAT VIOLATION:
      • - One dead mouse caught on a snap trap underneath dishwasher inside kitchen.
      • - Presence of fruit flies around the handwashing sink at the bar.
      • Corrective Action(s):
      • - Monthly pest control and monitoring contract with Abell Pest Control; managed by the hotel side of the building as they manage the whole building as per the staff. Last visit took place on Feb 14, 2023 and they will be increasing their visit frequency to biweekly. Ensure that the report is reviewed by the bar / kitchen staff and follow recommendations indicated in the pest control report: Structural issues - seal the hole found in the wall behind the stoves. Organize clustering inside electrical room. Install door seals for electrical room, boiler room and internet room.
      • - Dead mouse was discarded by staff at the time of inspection.
      • - Discard food scraps in the strainer inside the handsink frequently. Sanitize and keep the area dry.

      • - Staff stated that they pressure wash the kitchen floor every Tuesday. Ensure cleaning is done every day and all corners must be cleaned for pressure washing. Sanitize areas affected with rodent droppings after removing the droppings.

      • - Ensure to not store dirty dishes by the handsink area. Put them away at a designated bin. Remove food/water sources to not attract them. Empty the strainer in the handsink frequently.
      • - Discard the glue board with dead mouse. The trap itself has greasy build up. Clean the trap or replace it.

      • - Install a paper towel dispenser next to the sink. Ensure the hand sink is equipped with single use paper towels and liquid soap at all times.

      • - Ensure there are no food residues and continuous water source in the area noted above. Install traps if necessary.

      • Observation:
      • - Rodent droppings observed in the corner behind the tempura mix bin.
      • - Ketchup dispenser in the back kitchen observed with dried up ketchup residue on the nozzle.
      • - Food debris observed along the wall junctions. Oil accumulation underneath deep fryer.
      • - Mouldy caulking observed around the bar hand sink.
      • - Mould observed in the ice machine.
      • Corrective Action(s):
      • - Clean areas noted above. Ensure to clean all hard-to-reach areas after closing.
      • - The ketchup dispenser nozzle opening is big and is designed in a manner that residue can build up very easily. Change the dispenser to pump type for more sanitary use.
      • - Re-do the caulking around the bar hand sink.
      • - Turn off the ice machine, empty all ice out, remove all stains & mould, sanitize all surface and turn it back on.
      • Date to be corrected by: immediately; re-do the caulking until April 15, 2022.
