      • Observation (CORRECTED DURING INSPECTION): Observed a new hot holding unit; temperature set at 80 F (less than 60 C). Pizza and pizza bread in the warmer noted. When inquired, operator indicated that they buy the pizza and pizza bread frozen, warm them up in the oven then transfer to the warmer. Education provided that all items in the hot holding unit must be stored at 60 C or higher OR discarded after 2 hours if at less than 60 C. Unable to confirm either at the time of inspection. Operator stated that they warm up small amounts at 10 AM then transfer them to the warmer. Inspection time at 11:22 AM.
      • Corrective Action(s): Required operator to time stamp them to ensure they are discarded after 2 hours in the warmer if set at 80 F. Or set the warmer to 60 C. Operator indicated that she will discarded at noon. Updated food safety plan to be submitted.

      • Observation (CORRECTED DURING INSPECTION): Observed pre-cooked samasas were left at room temperature. When inquired staff stated that they were frozen; left at room temperature for storage and thawing. Samosas were mostly thawed and was at approximately 6 C. Education provided that thawing should not be done at room temperature but in a working cooler at 4 C or lower.
      • Corrective Action(s): Required operator to transfer all cold potentially hazardous products into a cooler at 4 C or lower. All potentially hazardous foods must be stored at 4 C or lower OR 60 C or higher. Staff transferred all products into a cooler at the time of inspection.
