      • Observation: Mold growth on the line cooler along the door sealants. All food stored in the cooler are in closed containers.

      • Observation: Presence of minor mouse droppings underneath the stair case. No droppings observed elsewhere and traps are in place throughout the facility.

      • Observation: 1) Observed gaps in wall with the stove around grease trap and left of the stove at the floor/wall/cabinet join.
      • 2)Food debris noted behind upright freezer.
      • Corrective Action(s): 1) Seal all gaps and clean around grease trap to prevent pest entry/harborage
      • 2) Pull out and clean behind all upright freezers to prevent pest entry/harborage

      • Observation: Mouse dropping observed through out facility, particularly under storage units and along floor wall joins. Droppings also noted inside open white storage bin for sugars and candies in dry storage area. Owner/operator stated that they are aware of issue and have set up numerous glue boards throughout premise (no pest control company has been hired to date).
      • Corrective Action(s): Go through all food in white storage bins and discard all open food. Clear out all mouse droppings and sanitize areas. Due: 2 weeks.

      • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: 1) Observed light coming in from bottom right corner or receiving bay door. This can allow for pest (particularly mice) entry
      • 2) Multiple shelving units with lower shelves less than 6" up off floor (including by receiving bay door, both dry food storage areas in middle of unit and front storage area with packaging materials/foil food containers). This makes it very difficult to clean under these areas and monitor for pest activity.
      • Corrective Action(s): 1) Block entry point at receiving bay door with a durable material that is impervious to pests, such as metal flashing or mesh. Due: Friday April 1, 2022
      • 2) Raise all shelves that are less than 6" up off floor to 6" or more off the floor and do not store any items on floor under these shelves. Due: 2 weeks.

      • Observation: 1) Food debris build-up observed under shelving units, between equipment and along floor/wall join.
      • 2) Build-up of grease noted in exhaust system and system was due for service back in 2020
      • Corrective Action(s): 1) Give premise a thorough deep clean, removing all dirt and food debris. Due: 2 weeks
      • 2) Have exhaust system serviced and cleaned. Due: 2 weeks

      • Observation: Two spray bottles (one cleaner one sanitizer) had no labels on them.

      • Observation:
      • 1) Old mice droppings found in storage area under the stairs. Droppings carry bacteria.
      • 2) Food debris, dust and cobwebs found in corners and under racks.
      • Corrective Action(s):
      • 1) Remove all items under the stairs; clean and sanitize all surfaces and items; remove all unused equipment and items to eliminate harboring areas for rodents; and store all items 6" off the floor on pallets, platforms or shelves.
      • 2) Detailed cleaning of the facility needs to be completed. Move all racks to clean the floor under them, and clean all lower shelves on racks.

      • Observation:
      • The exhaust canopy has not been professionally cleaned since opening, grease and food debris will accumulate and create a fire hazard. The exhaust filters have accumulated dust and grease on them, which can fall into food.
      • Corrective Action(s):
      • Call a professional cleaning company to clean the exhaust canopies and filters, and ensure this is done on a routine basis. The exhaust filters shall be cleaned by staff, between professional cleanings, to remove built up grease and dust.
      • **Correction date: Nov. 1/18**

      • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation:
      • The waste pipe under the 3-compartment sink, beside the stove top, is leaking. Water is pooling in a bucket and this will attract pests. Owner was aware of the leak and has contacted a plumber.
      • Corrective Action(s):
      • Repair or replace the pipe or seals so water no longer leaks. Empty the bucket every night until the leak is fixed.
