    • 209 - Repeat Food not protected from contamination [s. 12(a)]
      • Observation: (CORRECTED DURING INSPECTION) Scoop used for ice was stored on the surface on the kitchen counter. (Public Health Significance) - Storing scoop for ice on the kitchen counter exposes it to illness causing pathogens and dirt inhabiting the counter-top, such contaminated scoops if reused can cross-contaminate the ice and may cause food-borne illness.
      • Corrective Action: Ensure that scoop for ice is always stored in a container or in a sanitary manner to prevent contamination. Operator removed the scoop and placed in it a clean container at the time of inspection.
    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: Operator mentioned that large size food handling equipment such as trays and dough machine pots only get washed and cleaned and do not get sanitized. (Public Health Significance) - Inadequately cleaned and sanitized food handling equipment contain residues of food items that may harbour disease casuing organims. Such food habndling equipment when reused can cause contamination of food and potentially food-borne illness.
      • Corrective Action: Operator to ensure that large sized food handling is dismantled, cleaned and sanitized in the three compartment sink with a proper eash, rinse and sanitize step OR if the sink cannot accomodate the equipment sanitize them by using wiping cloths in bleach water solution at a concentration of 100 ppm.
    • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: (CORRECTED DURING INSPECTION) Kitchen backdoor was observed to be open at the time of inspection.(Public Health Significance) - Leaving kitchen backdoor open can facilitate the entry of pests that may carry disease causing organisms; pests may enter the food premises and can contaminate the food items, such contaminated food items if consumed can cause food-borne illness.
      • Corrective Action: Operator to ensure that kitchen backdoor is closed at all times. Recommended the operator to add a mesh screen with a frame. Operator closed the door at the time of inspection.

    • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: Observed backdoor opened during the inspection. The backdoor has no screens. The open door could allow entrance of pests into the bakery. Pest can cause cross-contamination of food, and cause disease to the public.
      • Corrective Action: Keep the door closed at all times or install door screen to avoid pest entrance when the door is open
