      • Observation: 1. Raw shelled eggs stored on top shelf of walk in cooler above packaged kale. Eggs can contaminate ready to eat foods.
      • 2. Open bag of panko batter observed stored directly on the ground near dough machine.
      • 3. Food storage in walk in cooler, such as sausages and sauces, do have have covers or lids to protect food contamination.
      • 4. Light covers and protection missing above prep tables in kitchen.
      • Corrective Action(s): 1. Always store raw protein below ready to eat foods on bottom shelves or a shelf for raw protein only. Correction required today.
      • 2 and 3. Ensure to store all foods in food grade containers or lids to prevent contamination. Correction required today.
      • 4. Ensure to replace the missing light covers to prevent contamination of work area from broken glass. Correction required in 2 weeks.

      • Observation (CORRECTED DURING INSPECTION): 1. Bleach water sanitizer in labeled spray bottle measured greater than 200 ppm chlorine.
      • 2. Open metal container of tomato paste observed in walk in cooler.
      • 3. Mesh bags of onions and beets stored directly on floor in dry storage area.
      • 4. Raw meats stored above ready to eat foods (e.g. bell peppers) in walk in cooler.
      • Corrective Action(s): Bleach water sanitizer was diluted to 200 ppm chlorine at time of inspection. Please ensure bleach water sanitizer is prepared at 100 to 200 ppm chlorine to minimize any excess chlorine residual on food contact surfaces. Ensure that once opened, canned foods are transferred to covered food grade containers. The inner lining of cans may become compromised once cans are opened. Ensure that all foods are stored off the floor to protect from potential contamination and to facilitate cleaning of floors. Ensure that raw meats/eggs are not stored above ready to eat foods to protect from potential contamination.

      • Observation: Food debris observed in the following areas:
      • - Under rear storage racks
      • - Under food storage racks along entire wall across from walk in cooler
      • - Under shelves near hot water tank
      • Corrective Action(s): Ensure the above-noted areas, along with any hard-to-reach areas, are properly cleaned and sanitized. Food debris and/or grease may attract pest activity. Date to be corrected by: March 21, 2018.

      • Observation (CORRECTED DURING INSPECTION): Deli slicer stored with food debris from previous night. Slicer was disassembled, cleaned, and sanitized at time of inspection. Note: This is a repeat violation. Further failure to comply may result in enforcement action.
      • Corrective Action(s): Ensure that all staff are made aware of the cleaning and sanitizing requirements for the deli slicer. It is recommended to include slicer cleaning and sanitizing as part of a sanitation checklist for every shift/day, depending on use. Ensure that slicer is properly cleaned and sanitized following each use.

      • Corrective Action(s): Items were cleaned and sanitized at time of inspection. Please ensure that all equipment/utensils/food contact surfaces are maintained in sanitary conditon to limit potential cross contamination.

      • Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher measured 60 degrees C and 10 ppm chlorine in rinse residual at utensil surface. Chlorine sanitizer was available and dishwasher was primed at time of inspection.
      • Corrective Action(s): Bleach was added manually during rinse cycle and utensil surface residual was measured at 50 ppm chlorine. Please ensure that utensils and/or equipment are re-washed and sanitized.
