      • Observation (CORRECTED DURING INSPECTION): A dirty equipment is stored in a yellow (dairy) plastic container on the shelf under first prep. table. The operator claimed that it is a clean item.
      • Corrective Action(s): Immediately. Clean and sanitize the item and stored it in a sanitary manner. The yellow container/box is not intended for this purpose (it is not easy to clean and sanitize).

      • Observation: 1. scoops with handles observed to be in powdered ingredient (e.g. sugar, flour) containers. Scoops should be stored outside as food handlers can potentially contaminate food when reaching for the scoop. In addition, scoops should be regularly cleaned and sanitized.
      • **Corrected during inspection** Chef removed scoops from ingredient container.
      • 2. ice build up observed in walk-in cooler. Sanitation of ice formed is unknown and may contaminate food. Ice formation also suggests there may be some malfunctioning of the walk-in freezer
      • Corrective Action(s): 2. Contact maintenance / refrigeration technician to have unit serviced/diagnosed.

      • Observation: Upright "True Brand" cooler is not able to consistently maintain <4 deg C and this has been a repeat issue. Temperature reached <4 deg C after cooler door remained closed for approx 10 mins. This cooler is a shallow upright cooler that loses its cold air rapidly once the door is opened.
      • Corrective Action(s): If upon next inspection this cooler is once again not recording temperatures of <4 deg C (regardless of inspection time), you will be required to remove and replace this cooler.

      • Observation: Upright cooler was at 10 deg C at time of inspection. Earlier temperature records indicate that cooler was at <4 deg C.
      • Corrective Action(s): Move all potentially hazardous foods to your walk in cooler and have the upright cooler adjusted or serviced to maintain an internal temperature of <4 deg C. Any potentially hazardous foods exposed to >4 deg Celsius for longer than 2 hours must be discarded as bacteria can grow after this time limit. Do not store any potentially hazardous foods in this cooler (ie. eggs, dairy, etc) until it has been adjusted or repaired to maintain a temperature of <4 deg C.
