      • Observation (CORRECTED DURING INSPECTION): Observation: Vegetable dicer still had dried food debris stuck in its crevices. The dicer was stored on the clean equipment rack. Not properly cleaning food equipment after use can lead to the harbourage of pathogenic microorganisms. When reused microbial contamination can occur causing food borne illness in patrons.
      • Corrective Action: Operator moved the dicer to the 2-compartment sink in preparation for cleaning and sanitizing. Ensure food equipment is taken apart for proper cleaning and sanitizing.

      • Observation (CORRECTED DURING INSPECTION): Observation: food prep hand sink was obstructed by a garbage bin. Obstructions to hand sinks can lead to employees not washing their hands at adequate frequencies, which increases the risk of contamination during food handling. This can make people sick.
      • Corrective Actions: Garbage bin was relocated in a manner where it doesn't block the sink. Ensure the sink is accessible at all times and equipped with liquid soap, paper towels and hot/cold running water.

      • Observation (CORRECTED DURING INSPECTION): Observation: Brown sugar container had original packaging (plastic bag) submerged in the brown sugar. The bag is a high contact surface that can introduce contamination to the dry ingredient. This could make people sick.
      • Corrective Action: Plastic bag of brown sugar was transferred to a separate container, with the bag discarded.
