- Observation: A pack of open flour was stored on the ground. Food items should be stored at least 15 cm off the ground for easier cleaning and limit areas that can attract pests.
- Corrective Action: Operator to store food 15 cm off the ground.
- 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
- Observation: A slicer sitting that was not in use on the counter had meat debris on the back side and underneath the guard. Meat debris may harbour pathogens that may contaminate products that are being cut, increasing risk of illness.
- Corrective Action: Operator to clean meat slicer and ensure it is clean after used.

- Observation: Cooler condenser located above storage shelves was dripping water into a container that was set-up to catch water. All food ingredients underneath were covered but they are at risk of being contaminated by cooler drippings, which can increase risk of illness when consumed. Operator is aware of the issue and is waiting on a technician to repair the unit.
- Corrective Action: Operator to repair condenser. Any food that was stored underneath the condenser should be covered.

- Observation: Open flour bags are stored on the floor.
- Corrective Action: Store food above the floor and keep food covered or sealed.

- Observation: The stainless steel wall used to hang tongs, whisks is covered with dust. Observed tongs are contaminated with dust.
- Corrective Action: The wall used to hang tools that have direct contact with food should be maintained in sanitory conditions.

- Observation: The wires of lighting fixtures next to the range hood are exposed. One bulb under the range hood doesn't light and oil and dust are observed to be accumulated in the bulb cover. A cornor of drywall ceiling falls partially.
- Corrective Action: Repair lighting fixtures, clean bulb cover and replace bulb, fix the ceiling.

- Observation: Scoop handles touch dry flour, rice stored in the bins. Open flour bags are stored on the floor.
- Corrective Action: Educate staff to use scoops properly and store food above the floor and keep food covered or sealed.

- Observation: The stainless steel wall used to hang tongs, whisks is coverded with dust. The table besides the unused oven and the drawers holding knives have food debris and grease built-up.
- Corrective Action: The wall and the drawers are used to store tools that have direct contact with food and should be maintained in sanitary conditions.

- Observation: The wires of lighting fixtures next to the range hood are exposed. One bulb under the range hood doesn't light and oil and dust are observed to be accumulated in the bulb cover. The paper towel dispenser in the banquet bar area isn't available.
