Ceiling surfaces must be smooth, durable, and easy to clean to prevent food contamination.2. A hole in the wall adjacent to the pasta station was observed due to broken baseboard tiles. Replace or repair wall and/or the baseboard tiles to ensure the surface is smooth, durable, and easy to clean to prevent food debris build-up and pest attraction.

      • The floor and baseboards were observed to have a build-up of grime and debris under the dishwashing area and behind the ice machine. Clean and sanitize the above-mentioned area.

      • The hand washing sink located near the front prep area found out of order. A service provider arrived on site during the inspection to repair the sink. Other hand washing sinks are accessible and adequately stocked.

      • The following areas require deep cleaning:- hard-to-reach areas throughout the kitchen, including baseboards and floor corners- the exterior of the ventilation hood - top area of the dishwasher, including the piping at the top- the kitchen ceiling and wallsClean and sanitize the indicated areas and ensure that they are regularly cleaned.

      • The following items and areas have some dust and/or grime build up:- the top exterior of the dishwasher- the ventilaton grate of the dishwasher - the exterior of the fist aid kit and paper towel dipensers.Clean and sanitize these areas. Ensure that they are cleaned as often as needed to maintain them in a sanitary state.

      • A bowl containing cooked chicken was uncovered in the walk-in cooler. The bowl was covered by a food handler during inspection. A box of food item was observed on the floor of the walk-in freezer. Box was moved off the floor.- Ensure all foods are protected from contamination and stored off the floor at all times.

      • There was ice build-up around the door surfaces of the walk-in freezer.Remove ice build-up and investigate the source of condensation. Repair the issue.

      • The following areas in the food establishment were insanitary:1) Surfaces of the cabinet under the drink fountain and ice cream station was dirty with food spills and debris.2) The countertop surfaces behind the grill and oven were dirty with debris. 3) The floors and walls behind the backroom storage door were dirty with grease marks and debris. 4) The ceiling surfaces, vents and fans in the kitchen area were dusty.Update Jul 20/23: parts of the ceiling have been cleared of dust particles. Remove dust from walls and other surfaces around the kitchen.Clean the above-mentioned areas thoroughly and include these areas in the routine sanitation schedule.
