    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • 1. A tray of raw uncovered chicken that was being stored over cooked beef and beside eggs was found in the standing cooler. The raw chicken was cooked during the inspection.The operator is to ensure that raw meats are not stored above cooked meats at any time. 2. Handleless scoops were found in multiple food storage containers throughout the facility. The scoops found in the bulk food storage were removed during the inspection. Please ensure that handleless scoops are not stored in the bulk food containers.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Dishwasher did not have any sanitizer detected at the plate level when the dishwashing cycle was run. This deficiency was corrected during the inspection. Please ensure that the dishwasher is tested regularly for it's sanitizer concentration at the plate level.

      • The chlorine/bleach sanitizer in the dishwasher is measured at 10 ppm with chlorine/bleach sanitizer test strips.Ensure that the dishwasher is serviced to produce a concentration of 100 ppm chlorine/bleach.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The handwashing sink in the back food prep area is not working. Ensure that the indicated handwashing sink is repaired.
