      • - Raw eggs observed in room temperature measured from 20C - 21C. Inspection took place right after the opening hours. It appeared that the eggs were kept in room temperature overnight.

      • - All eggs were discarded at the time of inspection. All eggs must be refrigeratred upon the delivery.

      • - Eggs are potentially hazardous food items that thas to be stored cold at 4C or below. Do not store them in room temperature.
      • - Do not store potentially hazardous food items in the cooler. Store only whole vegetables and fruits. Bean sprouts were discarded at the time of inspection.

      • - Low temperature dishwasher reached 35.9C maximum and the final rinse had no sanitizer (chlorine) detected.
      • Corrective Action(s):
      • - Staff has called the dishwasher technician who will be coming later today to repair the dishwasher. Staff was able to unblock the dispensing tube for the sanitizer which appears to be the culprit of no sanitizer being dispensed into the rinsing water. Final rinse water still had very low chlorine level at approx. 10ppm. Chlorine jug was replaced with a new one and the final rinse water had 100ppm chlorine.

      • - Cockroaches of all growth stages observed on glue boards placed next to the 3 door undercounter cooler at the far end of the back kitchen. Cockroach droppings observed by the wall next to the corner of the same undercounter cooler. Cockroches observed on glue board placed on the low temperature dishwasher. Last pest report from Ecolab indicates of cockroach activity in the dishwasher area.

      • - It appears that cockroach activity is highest in the area behind this undercounter cooler. This cooler is screwed / fixed to the adjacent wall. Ensure to unscrew the cooler, expose the area behind the undercounter cooler to clean & sanitize. Conduct a spray treatment for cockroach control by a professional pest control throughout the whole back kitchen. Do not operate during the treatment process and ensure no food item is exposed to the pesticide chemical. Correction Order issued.
