      • Observation:
      • - Observed roasted skewers of prawns being cooled down hung on the adjacent shelving rack wires, with some of the food in direct contact with the wires.
      • - Observed use of non foodgrade containers to hold large quantities of food, including chopped onions and hot rice pudding (cooling down).
      • Corrective Action(s):
      • - Do not hang the skewers where they can be potentially in direct contact with non food contact surface. Recommendation given to install a separate hanger higher up on the counter just for the skewers. All skewers were moved to other location at the time of inspection.
      • - Equip food grade containers for storing food items.

      • - Rodent droppings observed inside the dry storage room (kitchen floor).

      • - Dry storage room was cleaned at the time of inspection. Ensure to conduct deep cleaning routinely.
      • - Area behind the laundry machine and the adjacent wall/floor to be cleaned & sanitized.

      • - Clean all the hard-to-reach areas noted above. Ensure to sanitize all the surfaces affected with rodent droppings.

      • - Observed one large towel hung up to the shelf of the prep cooler. Cook stated that they use it to dry their hands.

      • - Do not use reusable towel for drying hands, wiping hands etc. Towel was removed at the time of inspection.

      • Observation (CORRECTED DURING INSPECTION):
      • - Observed buckets of cooked potatoes, cauliflower and vegetables at around 20C.
      • Corrective Action(s):
      • - Staff stated that they have been cooked roughly 30 minutes ago. Cooling from cooking temp to 20C does not occur within 30 minutes. Ensure proper cooling procedure is followed (60C to 20C within 2 hours and 20C to 4C or below within 4 hours) and transfer them to the cooler as soon as the temperature of the food is in the room temp range.

      • Observation:
      • - One mouse was caught in the October report from pest control company. Rodent droppings observed around the laundry machine (2nd floor).
      • Corrective Action(s):
      • - Ensure there is no gap / hole in the wall around the washer. Clean up the rodent droppings. Continue to monitor for rodent activity and ensure appropriate control measures are in place.

      • Observation (CORRECTED DURING INSPECTION):
      • - Multiple bags of raw lamb chops probed at 18.6C in room temperature. Staff stated that they were put out from the cooler to be prepared.
      • Corrective Action(s):
      • - There is no reason to warm up 'cold' food item for prep. Take the item out from cooler when they can be prepped immediately. Items discarded.

      • - Mechanical dishwasher interior surface observed with debris build up.

      • - Clean & sanitize all items above.

      • - Monthly pest control in place by third party pest control company. Increase the frequency to biweekly (2X a month).
      • - Ensure a treatment service is done for cochroach control. Service report will be reviewed.
      • - Remove all items on the shelves to facilitate proper cleaning. Sanitize any areas with rodent droppings.
