      • Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food (prepackaged sandwiches, prepackaged pizzas, eggs, cheese, and milk products) were stored in the walk-in-cooler, which was above 4 degrees (measured at 9 degrees C). Surface temperature taken of products was above 4 degrees C. Operator informed that the walk-in-cooler was below 4 degrees C earlier today. Staff informed that they had recently left the door open for the walk-in-cooler while cleaning it prior to the inspection.
      • Corrective Action(s): Ensure cold potentially hazardous food is stored at or below 4 degrees C. Keep the walk-in-cooler empty of cold potentially hazardous food until it can be maintained at or below 4 degrees C. Staff moved the cold potentially hazardous food products to other refrigeration units at or below 4 degrees C.

      • Observation: 1. Walk-in-cooler was at 9 degrees C at the time of inspection. Staff informed that they had left the door open to clean this fridge recently prior to the inspection.
      • 2. Upright freezer in the back storage room was at -1 degrees C at the time of inspection. Buildup of ice was evident. Staff informed that they would clean it and remove the ice buildup.
      • Corrective Action(s): 1. Ensure the walk-in-cooler is maintained at or below 4 degrees C; Correct today. Operator called a technician to re-service this cooler. Ensure cold potentially hazardous food is stored at or below 4 degrees C; Effective immediately.
      • 2. Ensure to remove the accumulating ice buildup in the upright freezer and to maintain it at or below -18 degrees C; Correct today.
