      • Observation (CORRECTED DURING INSPECTION): Sanitizer solution had no detectable chemical residual in the spray bottle (0ppm quats) at time of inspection. Employee indicates that the solution is refilled approximately once a month and used at the end of the day on the meat slicers.
      • *Sanitizer solution was replaced with a fresh mixture from the janitor's closet in the back room while on-site. Concentration in the spray bottle is now at 200ppm.
      • Corrective Action(s): *Sanitizer solutions should be prepared every 2-4 days to ensure that the chemical concentration in the mixture is adequate to sanitize food-contact surfaces (ie. 200ppm quats concentration)
      • *Employees must routinely check the concentration of the solution in the spray bottles using test strips from the chemical supplier. 200ppm quaternary ammonia is required to effectively sanitize surfaces, per product label
      • *The sanitizer solution must be applied to food contact surfaces every 2-4 hours to prevent growth of germs on surfaces
      • *Ensure employees are trained to use the sanitizer solution on food-contact surfaces every 2-4 hrs throughout their shift (ie. not just at end of day).

      • Observation (CORRECTED DURING INSPECTION): Sanitizer concentration in Avmore Ecopure EP66 disinfectant/sanitizer spray bottle in the deli area was below required concentration of 200ppm quaternary ammonia. Concentration at time of inspection was ~50ppm.
      • Corrective Action(s): Sanitizer supply chemical is nearly empty at the fill station in the janitor's closet. Refilled sanitizer spray bottle with a chlorine bleach and water solution (100-200ppm concentration) as a temporary measure until supply chemical is replaced.
      • *Ensure to confirm sanitizer solution concentrations daily using test strips from the supplier.
      • *Ensure adequate supply of chemicals are on-hand at all times
      • *Ensure employees are trained on procedures to refill/replace chemicals when required

      • Observation (CORRECTED DURING INSPECTION): Observation: QUATS spray bottle used for food contact surfaces measured to be 50ppm.
      • Corrective Action: Re-make the quats sanitizer to 200ppm. Ensure that QUATS sanitizer is at adequate concentration of 200ppm by using test strips (test strips given to the operator) Operator mentioned that she will re-fill the quats sanitizers with freshly made batches every other day.

      • Observation (CORRECTED DURING INSPECTION):
      • At the end of the day, staff are only using sanitizer to clean surfaces. Sanitizer only kills germs, it doesn't remove food and grease. The surfaces are not clean and will attract pests.
      • Corrective Action(s):
      • Immediately clean all surfaces in the deli area with hot water and soap, wipe down with a hot water and a clean cloth, and then spray with sanitizer. Inform staff of the correct cleaning process at the end of the day. At time of inspection, staff were informed.

      • Observation (CORRECTED DURING INSPECTION):
      • The Quats sanitizer in the spray bottle was 0ppm. The Quats strength is too low to kill bacteria, and therefore surfaces are not being sanitized.
      • Corrective Action(s):
      • Immediately fill spray bottle with new Quats solution. The solution should be changed daily, or at least every 2-3 days so the strength remains at 200ppm. During the inspection, staff filled bottle with fresh Quats solution.

      • Observation (CORRECTED DURING INSPECTION):
      • The bucket of soap for the high temperature dishwasher was empty, no soap was being injected into the dishwasher during the wash cycle, therefore dishes are NOT be properly washed.
      • Corrective Action(s):
      • Replace the empty soap bucket with a full one, and "prime" (press and hold the detergent button down) the soap line so it is full with soap prior to using the dishwasher. If you have to order a bucket of soap, pre-wash dishes with soap and hot water prior to placing in the dishwasher for sanitizing.
