     • Observation: Operator was unable to find the drain plug(s) for the 3-compartment sink at time of inspection. Drain plugs are required to fill the 3rd compartment of the sink with sanitizer solution when ware-washing.
     • Corrective Action(s): *Obtain replacement drain plugs for the 3-compartment sink before end of the day.
     • *Ensure all reusable kitchen implements (knives, cutting boards, bowls, utensils, etc.) are manually-sanitized using the approved 3-compartment sink method (see reference sign posted on the side of the 3-comp sink).
