      • Corrective Action(s): Ensure all foods are stored at least 6 inches above the floor to protect against contamination. Elevate foods by placing them on milk crates, pallets, empty boxes, etc if shelf space unavailable.

      • Observation (CORRECTED DURING INSPECTION): Ice machine had a build-up of black biofilm (slime) on the interior. Operator was notified and they immediately cleaned and asnitized the area during the insection. Ice batch was disposed of. Increase cleaning frequency for ice machine.

      • Observation:
      • There is accumulated dust and mildew on the walls inside the keg cooler. Staff were aware of the matter and it is scheduled to be cleaned this week.
      • Corrective Action(s):
      • Wash the walls with hot water and soap to remove the dust and mildew. Increase the frequency at which this is being done, to prevent accumulation.

      • Observation:
      • Accumulated dust on the walls and ceilings around air diffusers in the kitchen area; and food debris on the undersides of tables & sinks, and on the walls behind/beneath tables, sinks and shelves. The dust could fall into food, and food debris will attract/breed pests (rodents and flies).
      • Corrective Action(s):
      • Clean the mentioned areas with hot water and soap to remove the dust and food debris. Ensure this is done on a routine basis.

      • Observation:
      • Observed a number of plastic food inserts/containers were chipped, cracked or damaged. Pieces of plastics could fall into food, and/or bacteria can grow in the cracks.
      • Corrective Action(s):
      • Inspect all plastic food inserts/containers and discard all damaged ones. Purchase new ones, and ensure to routinely inspect such items for damage.

      • Observation (CORRECTED DURING INSPECTION): Observation #1 - Chemical glasswasher has 0ppm of chlorine upon the final rinse cycle. 50ppm of chlorine residual is required to effectively sanitize glassware and remove disease-causing pathogens.
      • Correction: Operator manually increased the concentration of chlorine. Tested again and 50ppm residual was achieved upon the final rinse cycle. Test the galsswasher concentration routinely and record results.

      • Observation #2 - QUATS santizer spray bottles had between 50-100ppm of QUATS. 200ppm is required to sanitize food contact surfaces.
      • Correction: Empty all bottles of QUATS santizer and refill wiht new solution (manually mix until the dispenser is fixed). Replace solution regularly to ensure that 200ppm w maintained.

    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Observation #1 - Quats automatic dispenser was not dispensing the required concentration of QUATS sanitizer. The dispenser must dispense 200ppm to correctly sanitize food contact surfaces.
      • Correction: Call maintenance to adjust concentration of QUATS at the dispenser. Do not use the dispenser until it is fixed. Manually mix up the required concentration of 200ppm until dispenser is repaired. Test the concentration at the dispenser daily and record results.
      • Date to be corrected by: June 22, 2018
      • Observation #2 - Flour bin lid had a chunk missing from it (chipped). This is unsafe and unsanitary as pieces of plastic could fall in food and the damaged items cannot be cleaned properly.
      • Correction: Discard broken lid and purchase a new one. Conduct regular inspections of such items (chipped, cracked or otherwise damaged) to remove them.

      • Observation:
      • 1) The ambient temperature of the under the counter cooler in the kitchen area closest to the bar glass washer measured approximately 8C.
      • 2) The lid to the prep cooler closest to the wall was in disrepair.
      • Corrective Action(s):
      • 1) Remove all potentially hazardous foods from this cooler and return them to working coolers. Have this cooler repaired until it can consistently achieve and maintain 4C/40F.
      • 2) Repair the lid with materials that are impervious to water, smooth and easily washable.
