- Observation: EcoMiser main dishwasher reached 71.8, 67.8 and 71 C at the plate surface during 3 consecutive cycles. Under counter dishwasher in the Coffee prep room was only at 65 C during first run.
- Corrective Action(s): Adjust the dishwasher so that it reaches at least 71 C at the dish surface (ideally 75 C) during each cycle. A max/min recording thermometer must be used for monitoring santiizing water temperature at least once a day. Similar monitoring must also be conducted for the dishwasher located in the coffee prep room.
