    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Kitchen:1) Not all food equipment was sanitized in the manual wash method. The approved manual dishwashing method with a 2 compartment dishwashing sink includes: wash and rinse in 1st compartment, then sanitize by complete immersion in an approved sanitizer in the 2nd compartment.2) Some food prep equipment (pots, baking sheets, mixing bowls) did not fit inside the double compartment sinks. The pot sink provided was adequate in size but was only a single compartment. Please either remove all equipment that do not fit inside the existing double sinks, install an additional pot sink of equal or larger size next to existing pot sink, or replace a double compartment sink with basins large enough to accommodate the largest piece of equipment that is washed.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Warehouse:1) A dead mouse was noted in the NW corner of the warehouse. Please remove and sanitize area.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • Glue boards were not properly set up in several live traps. Many glue boards were flipped over or had caught several insects. Please request servicing by pest control company.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Kitchen:1) The ceiling in the bathroom was water damaged. Staff said leak had been addressed. Please repair/paint damaged ceiling.2) The access panel in the bathroom had fallen off and insulation was exposed. Please resecure the panel.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Warehouse:1) There were several feathers in a corner in the W side of the warehouse. Please clean.
