- Corrective Action(s): Ensure all sanitizer buckets have QUATS sanitizer suffient for sanitizing food contact surfaces. Operator replaced the QUATS sanitizer bucket at the front of house. Inspector tested the solution to be >200ppm.

- Observation: 1. Tiles underneath frier are missing and broken pieces stored here. Recess where tiles were has a lot of build up of grease, fries and other food debris.
- 2. Condenser inside sundae assembly cooler is over flowing with diry water and ice. Food is stored in this area uncovered.
- 3. Underneath ice cooler and behind ovens have some food debris and dark stains on floor.
- 4. Inside milk cooler, two raw wood panels at the back appear to be molding.
- Corrective Action(s): 1. Pull out equipment.
- Clean up grease and maintain clean, do not let grease build up.
- Replace tiles, seal around tiles.
- 2. Defrost the condenser and melt and remove the ice build up. Ensure this area does not over flow or use a larger tray to capture the overflow and monitor/dump occasionally. (2 days)

- Staff are using modified 3 comp sink method between the 1 sink and 2 sinks on either side of the dishwasher.
- At the time of inspection, items looked like they were cleaned and stored appropriately in the sinks.
- Quat sanitizer in the sink measured >200ppm (800-1000ppm).
- This is acceptable for temporary use when dishwasher is not working but cannot be for long term and according to your Sanitation Plan.
- Corrective Action(s): Fix and repair the dishwasher.

- Ensure that dishes can be adaquately and fully submerged in the sanitizing sink.

One of the employees understands how to do this, however, dishwasher does not dispense chlorine and leaves large gaps of no liquid in lines when this is not done.
- Corrective Action(s): Fix the dishwasher timing belt or dispensing mechanism so it runs automatically.
- Train all dishwashing employees to understand how this works in the meantime so there is not one staff person that facility needs to rely on. Be sure to test each time and ensure lines are not blank when dishwasher is running.

- Block and seal light showing through back door.
- Remove raw wood and tape from cooler, paint or seal with cleanable, durable, non porous material such as plastic.
- Clean corners of floors and see if small black specks (potential droppings) reappear.
- Operator has plans to replace, repair cutting boards or use alternative food contact surfaces such as mini boards for cutting items such as bananas.
