      • Dust accumulation was observed on the kitchen ventilation surface.- Please clean and ensure to maintain in a sanitary state at all times.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The bleach sanitizer that was in use was 1000 ppm.-ensure the bleach sanitizer is 100 ppm (1/2 tsp bleach per 1 Litre of water; note the dishwashing instructions on the wall have the recipe).
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) There was no probe thermometer for staff to measure cooking/reheating temperatures.-obtain a probe thermometer and ensure staff are using it to verify internal cooking temperatures.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • There was no soap dispenser at the handwash sink in the kitchen.--all handwash sinks require soap and paper towel in suitable dispensers.(Staff resolved the issue during the inspection, but if a soap dispenser is mounted on a wall, it won't go missing).
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The ceiling in the kitchen had a hole from a water leak.-repair the ceiling; ensure there are no water leaks in the building.

    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Data logger measured cycle for Jan 24 2024- did not meet minimum requirement of 3600 HUE. Data logger measure cycle was 2775.8 HUE. Verbally advised by staff that normal cycle was used. ACTION- approval for dishwasher was based on 'heavy' cycle. Ensure this cycle is used. Data logger will be used to retest using 'heavy' cycle.

      • Droppings were observed in the back corner of the undersink cabinet. Droppings also observed on back wall-floor corner on wall next to upright refrigerator. Clean up droppings and observe for activity. Ensure pest control monitoring is enhanced onsite.

      • Carton of raw shelled eggs were stored in the refrigerator on top shelf where fruit and vegetables were stored below. Corrected onsite.

      • Droppings were observed in the back corner of the undersink cabinet. Droppings also observed on back wall-floor corner on wall next to upright refrigerator. Clean up droppings and observe for activity. Ensure pest control monitoring is enhanced onsite.
