      • Observation(s): Observed raw eggs stored above ready-to-eat foods in a cooler. Raw shell eggs and animal proteins must be stored below ready-to-eat foods to prevent cross-contamination.
      • F1.7B Ready-to-eat foods must be stored in a manner that prevents cross contamination.
    • F2.1 Does the facility have proper monitoring supplies?
      • Observation(s): 1) Observed no probe thermometer onsite. Operator must obtain a probe thermometer to measure temperatures during food preparation. 2) Operator to confirm that QUAT test strips are available on-site for the surface sanitizer. 3) Discussed adding required refrigerator and freezer temperature ranges, as well as corrective actions for out-of-range temperatures, to the facility’s temperature monitoring log. EHO to provide an example to the operator.
      • F2.1A Sanitizer test strips must be available for each chemical sanitizer used at the premises.
      • F2.1B A thermometer accurate within 1 °C must be available to monitor processes.

      • Observation(s): No QUAT test strips were available on-site for the surface sanitizer. QUAT test strips are necessary for ensuring that sanitizer concentrations are at safe and effective levels. Please obtain QUAT test strips and send a photo to the EHO once they have been obtained.
