- Empty ice, and clean and sanitize interior surface of the ice machine. Complete today. Comments Handwashing sink was equipped with hot and cold running water, liquid soap, and paper towel. Sanitizer measured at 500ppm hydrogen peroxide using test strips. Dishwasher sanitizing rinse measured at 100ppm chlorine using test strips. Refrigerator temperatures measured at or below 4°C. Freezer temperature measured at or below -18°C. Temperature log was maintained daily. Permit to Operate was posted in a visible location. No signs of pests were identified. General sanitation was good. Operator had valid FOODSAFE Level 1 certificate. Baked goods were from Mosi Bakery.
