      • Observation (CORRECTED DURING INSPECTION): Sanitizer bucket measured at 0ppm in the main kitchen and sanitizer bucket is empty at the countryside servery.
      • Corrective Action(s): Sanitizer must be available at all times to ensure it can be assessible when needed. Head chef replaced the bucket with new solution from dispenser.

      • Observation: 1. Soap dispenser at the main servery has broken pump tab. Soap still dispenses but difficulty to press and dispense onto hand
      • 2. Coffee machine in the main servery leaking water onto the ground.
      • 3. Left condenser fan not spinning, large accumulation of ice on the fan/unit
      • Corrective Action(s): 1. Repair/replace the soap dispenser to ensure easy access to liquid soap
      • 2. repair/replace the water pipe for the coffee machine to ensure no pooling of water is on the ground. In the mean time keep ground free of pooling of water.
      • 3. Ensure ice build up is removed and free of ice at all times to ensure condenser can operate properly.

      • Observation (CORRECTED DURING INSPECTION): Lactic Acid dispenser located in the country lane servery does not dispense proper concentration (color tested to be outside of range). Operator obtained sanitizer solution from main kitchen dispenser which was tested to be in the correct color range. Continue to use the sanitizer dispenser in the main kitchen until dispenser located at the servery is fixed. Ensure to check the solution each time the sanitizer is dispensed/made.

      • Observation (CORRECTED DURING INSPECTION): Hand wash station at the main kitchen servery does not have single use paper towel. Operator replaced dispenser with paper towel. Ensure to check supply of soap and paper towel to ensure they are stocked at all times.

      • Observation: Main door for receiving goods have gaps between the door and the door does not fully close
      • Corrective Action(s): Ensure door can be fully closed and no gaps exist when not in use.

      • Observation: Operators had test strips for Quats. Sanitizer on site for food preparation has been changed to lactic acid. No test strips available on site for lactic acid or records that this has been checked.
      • Corrective Action(s): Facility has called supplier to obtain test strips during the inspection.
      • Ensure dispenser is maintained to allow adequate sanitizer levels for food preparation.
      • Highly recommend recording sanitizer levels, at least daily and while there are cases in the facility.
      • Educate all staff on the changes.

      • Observation: Back door for receiving and garbage has 0.5cm gap along bottom of double doors. Both doors appear damaged and dented. Dry storage area and dry storage room for facility is immediately adjacent to this door.
      • Facility has had no recent exterior or interior activity for rodents.
      • Ants has been an on-going reported issue in the facility.
      • Corrective Action(s): 1. Repair back door.
      • 2. Monitor for activity and treat as necessary by following directions from pest control.

      • Observation: 1. Wall adjacent to oven - paint is peeling in large patches and chipping off. This area has had constant heat exposure and wall is deteriorating.
      • 2. Wall underneath dishwasher - about 2 feet by 3 feet area of the wall behind the dishwasher from the floor level up is deteriorating badly. Drywall has signs of significant water damage and heat exposure, exposing insulation behind.
      • Corrective Action(s): 1. Seal with surface that is smooth, easily cleanable and durable. Consider the type of material that will need to be constantly exposed to heat and steam.
      • 2. Remove damaged portion of the wall and inspect for further damage and mold. Seal with water and heat resistant material to prevent mold build up and allow area to be easily cleanable and durable.

      • Observation: Dishwasher sanitizing temperature at 79.6C during final rinse cycle.
      • No gauge available to monitor temperature of dishwasher.
      • Dishes come out with slimy liquid feeling, likely the rinse aid is not being adequately washed off dishes as the temperature of final rinse is too hot. Some deterioration of plastics and hard plastics visible on dishes and equipment.
      • Corrective Action(s): Dishwasher contractor has been called in today to fix dish washer and leaks.
      • At this time, please rinse off dishes in clean sink and let air dry.
      • Fix gauge or use a thermometer capable of taking a maximum temperature.

      • Food service area has no baseboards underneath equipment. Area between the floor and tile or wall has a gap where there are food wrappers, food debris getting caught and spills are deterorating the wall.
      • Corrective Action(s): Clean underneath equipment in this area. Pull out equipment that are on caster wheels and clean behind.
      • Monitor area for pests, spills and debris and maintain clean on a regular basis.
