- Observation (CORRECTED DURING INSPECTION): 1. QUATS sanitizer bottle in the main kitchen is empty - Sanitizer dispenser dispesned QUATS solution of less than 200ppm.
- 2. QUATS sanitizer bucket missing from Severy 3.
- Corrective Action(s): Ensure sanitizer buckets and dispenser contain 200-400ppm of QUATS solution. Test strips are available for testing. Have kitchen staff monitor the QUATS solution and replace when empty. Always use test strips to ensure solution is at 200ppm
- 1. Operator replaced the empty QUATS sanitizer bucket. Dispenser was able to dispense QUATs solution tested at 200ppm.
- 2. Operator obtained new QUATS bucket solution tested at 200ppm for Severy 3.

- Observation (CORRECTED DURING INSPECTION): QUATS dispenser in the main kitchen dispensing between 100-200ppm. Operator replaced the sanitizer solution. Dispenser checked again at >200ppm. Ensure that all sanitizer are tested prior to dispensing to ensure sanitizer solutions have proper sanitizing levels. All dispenser must dispense >200ppm of QUATS.

- Observation: Slushie machine in the bar area has build up of debris on the dispenser tip and mold build up in the catch tray.
- Corrective Action(s): Stop the dispensing of slushie. Empty the slush from the slushie machine, clean and sanitize the equipment. Ensure the slushie in the bar area is on the routine cleaning schedules.
